You know who’s been killing me lately? Taku Sekine, head chef of Dersou.
He’s been posting about ramen night…

Ramen with hand-made noodles, beef & egg
and crab soup…

Mama’s crab miso soup
and so many
delicious

Dehydrated beetroot soaked in apple syrup, fois gras, oseille, fromage blanc
beautiful
ridiculously fresh looking plates of food.
It’s killing me.
Taku, man. Things of beauty.
Incidentally, here is Le Fooding’s full list of 2016 awards, with Dersou as king of the castle. On top of that, Taku is completely humble and unassuming. No big shot chef ego, just a super friendly, generous guy cranking out creative, awesome food.
